Here is a great quick recipe for some pancakes..

I like to make some of these and then reheat them the next day or a day after. Throw some scrambled eggs and bacon on the side you got yourself a pretty stellar meal.

This will make enough for 2 people.

2 whole eggs
1/2 cup almond meal
1/2 cup coconut milk
1 apple, cored and chunked
2 tsp cinnamon
1 tsp vanilla extract
1/2 pint fresh blueberries
coconut oil for cooking

Combine all ingredients, except blueberries, into a blender or food processor and blend until smooth. Pour into a bowl and add blueberries. Heat a large pan on medium heat; add coconut oil and cook small pancakes 2-3 minutes on each side (these are hard to flip, so when they are ready, jab the spatula underneath fast)

    Randy i dont know if theser are the exact recipe Deb uses.. but they are close and good.. all of these can be tweaked you know..

    tried the banana and flaxseed pancakes recipe on page 95 on cookbook steve sent it was good and easy to make but paleo pancake above is much better

    What brand of almond flour are you guys using, mine keep breaking apart!

    Suggestion to keep the pancake from falling apart. Add one tablespoon of milled flax seed. Also, make the pancake batter and refrigerate it for a few hours.
